Ingredients:
1 2-3lb pork loin
2 Tbsp Gourmet Inspirations Smoke & Spice Rub
1/2 cup OLEA's Gravenstein Apple White Balsamic Vinegar
1/2 cup OLEA's Extra Virgin Olive Oil
Directions:
Dissolve rub in balsamic vinegar, then stir in olive oil. Place pork in a sealable bag and pour marinade over top. Squeeze out air, seal bag and marinate 2 hours to overnight.
Preheat oven to 350F. Place pork into a glass baking dish along with marinade. Bake in preheated oven, basting occasionally until the pork reaches the internal temp of 145 degrees F, about one hour. Let the roast rest for 10 minutes before slicing and serving.
Drizzle with remaining juices for extra flavour!
