Ingredients:
- 2 slices of hearty whole-grain or sourdough bread
- 1 ripe avocado, mashed
- 6-8 cherry tomatoes, halved
- 2 tablespoons OLEA's Extra Virgin Olive Oil (Garlic or Basil Olive Oil works great too!)
- 1 tablespoon OLEA's Balsamic Vinegar (Try Traditional, Fig, or Denissimo for depth!)
- ¼ teaspoon sea salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional, for heat)
- 1 tablespoon crumbled feta cheese
- 1 tablespoon chopped fresh parsley or basil
- ½ teaspoon toasted sesame seeds or everything bagel seasoning (optional)
Directions:
- Toast the bread to your desired level of crispiness.
- Mash the avocado in a bowl with a pinch of salt and black pepper. Spread evenly over the toasted bread.
- Top with cherry tomatoes, arranging them neatly over the avocado.
- Drizzle with olive oil and balsamic, letting the flavours soak into the toast.
- Sprinkle with feta cheese, fresh herbs, red pepper flakes, and sesame seeds (if using).
- Serve immediately and enjoy this Mediterranean-inspired bite of deliciousness!
