Mediterranean Avocado Toast

Ingredients:

  • 2 slices of hearty whole-grain or sourdough bread
  • 1 ripe avocado, mashed
  • 6-8 cherry tomatoes, halved
  • 2 tablespoons OLEA's Extra Virgin Olive Oil (Garlic or Basil Olive Oil works great too!)
  • 1 tablespoon OLEA's Balsamic Vinegar (Try TraditionalFig, or Denissimo for depth!)
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional, for heat)
  • 1 tablespoon crumbled feta cheese
  • 1 tablespoon chopped fresh parsley or basil
  • ½ teaspoon toasted sesame seeds or everything bagel seasoning (optional)

Directions:

  • Toast the bread to your desired level of crispiness.
  • Mash the avocado in a bowl with a pinch of salt and black pepper. Spread evenly over the toasted bread.
  • Top with cherry tomatoes, arranging them neatly over the avocado.
  • Drizzle with olive oil and balsamic, letting the flavours soak into the toast.
  • Sprinkle with feta cheese, fresh herbs, red pepper flakes, and sesame seeds (if using).
  • Serve immediately and enjoy this Mediterranean-inspired bite of deliciousness!
